Abstract
“Sosis” is a processed product that can be grown by microbes easily. Sosis is not durable and able to be sold out. Due to poisoning phenomenon using the excessive of nitrite, this research is done. The purpose of this research is knowing the level of nitrite that used in sosis sapi and sosis ayam product which is sold in Mojosongo. This research uses quantitative and qualitative analysis method. The subjects or samples are three brand of sosis sapi and three brand of sosis ayam. Qualitative analysis done by reacting the samples with sulfanilite acid and naphthylamine and forms the pink compound. Quantitative analysis uses UV-VIS spectrophotometer method in wavelength of 520.8 nm. The result of qualitative analysis is all the sosis brand (A, B and C), sosis ayam and sosis sapi sold in Mojosongo use nitrite. The result are Brand A, sosis ayam contains 6.90 mg/kg of nitrite, sosis sapi contains of 5.72 mg/kg of nitrite. Brand B, sosis ayam contains 10.97 mg/kg of nitrite, sosis sapi contains of 8.13 mg/kg of nitrite. The last, brand C sosis ayam contains 8.95 mg/kg of nitrite, sosis sapi contains of 4.41 ng/kg of nitrite. The highest nirtit levels of sosis sapi in brand B was 10.97 mg/kg, whereas the lowest Nitrite levels of sosis sapi in brand A was 6.90 mg/kg. Nitrite levels in sosis sapi and sosis ayam sold in Mojosongo did not exceed the maximum limit of nitrite usage determined by BPOM No. 033 in 2013 about Food Additives as 30 mg/kg, so still safe to eat.
