Abstract
Tempeh or fermented soybean cake is a type of food which can be easily found, economical, and rich in nutrition. Fermented soybean cake consumption rate per capita in Indonesia in 2012 is 6.45%. Food packaging plays important roles in controlling bacteria contamination in food. Fermented soybean cakes which are commonly found in the market are wrapped in banana leaves and plastics. This microbiological testing aims at investigating whether the fermented soybean cake samples meet the Indonesia’s National Agency of Drug and Food Control (BPOM) standards. This research applied microbiological analysis method using MPN (Most Probable Number) and Salmonella testing covering 4 stages. A total of 6 fermented soybean cake samples used in this research were obtained from Pasar Legi in Surakarta. Banana-leafwrapped fermented soybean cakes (3 samples) were labeled A, B, and C, while the plastic-wrapped ones (3 samples) were labeled X, Y, and Z. The examination results for all samples of banana-leaf-wrapped and plasticwrapped fermented soybean cakes demonstrate MPN-Coliform >1100/g, while a test on plastic-wrapped fermented soybean cake sample with X label demonstrates MPNColiform <3/g. Salmonella sp testing gives negative results in all samples. In reference to BPOM standards, the maximum permissible limit (maximum contaminant level) for Coliform bacteria is 10/g and the maximum permisible limit of Salmonella sp is negative/25g; and therefore, sample X is the only sample which meets BPOM standards..
