Abstract

This study aims to determine whether qualified Nugget quality bacteriological according BPOM or not. This test was conducted in the laboratory of Microbiology University of Setia Budi Surakarta, in January, 2015. This test uses three nuggets of coded samples A and B from the traditional market and chapter X the code Supermarket. Bacteriological test of the Nugget include : Total Plate Count (TPC), Most Probable Number (MPN), E. coli test, test for Salmonella sp., and Staphylococcus aureus. The result of ALT test in sample A is 1.1 × 10 4 colonies/g, the B sample was obtained of 2.0 × 103 colonies/g and X samples obtained result of 3.1 × 10 2 colonies/g. The result of Coliform MPN test in sample A is of 240/g, the sample B 23 / g, and the samples X 0/g. The result of E.coli MPN test in sample A is 11/g, while samples B and X result 0/g. Test for Staphylococcus aureus and Salmonella sp. in sample A, B, and X obtained a negative result. Based on the results obtained on the sample nugget A, B, and X indicates that the sample nugget X qualify bacteriological based BPOM, while the nugget samples A and B are not eligible bacteriological based BPOM.
