Abstract
Cooking oil is a food material very desirable to the society, the use of which is inseparable from such society activity as frying food. Many people use cooking oil repeatedly and do not store it in closed container so that oil can be oxidized, resulting in the damage in cooking oil. In this research, an analysis should be conducted on the quality of oil in both opened and closed containers during 7-day storage period in humid room. The sample was taken from pasar legi in Surakarta. The research on the determination of peroxide number was carried out using iodometry method, that was, based on the number of Iodine released after the addition of KI and H2SO4 4N solution. The expressed iodine was titrated with Na2S2O3 and then added with amylum 1% solution until it had no color. The result of quantitative test on peroxide content in closed-condition cooking oil showed a value ranging between 0.289 mek O2/kg and 5.151 mek O2/kg. Meanwhile, that in opened condition showed a value ranging between 1.216 mek O2/kg and 6,363 mek O2/kg. Non-fried sample (Mxp0) stored in closed condition in humidity for 7 days was still qualifying the standard quality of cooling oil. Meanwhile, the non-fried sample stored in opened condition (Myp0), frying twice and four times in opened condition (Mxp2, Mxp4) and closed condition (Myp2, Myp4) had been damaged because it had exceeded the threshold of standard quality of cooking oil, 1 mek O2/kg as indicated with the increase in peroxide number in sample cooking oil (Mxp2, Mxp4, Myp0, Myp2, Myp4) inconsistent with (SNI) 7381 2013 concerning the preconditions of cooking oil quality.
