Abstract
Kidney beans (Phaseolus vulgaris L.) is kind of nuts are rich in nutrients. In additional to nutrient- rich red bean also contains anti-nutritional substances or substances that are harmful to the body, called phytic acid. Phytic acid (C6H12O24P6) would form a good bond with divalent and three minerals such as iron into soluble compounds in the body. Fourteen studies using rat strain wistar. The mice were given two treatments in the form of feeding in the early weeks of the form BR1 and the first and second week in the form of BR1 and red beans. As blood serum samples were taken through the vein of the eye (opthalmikus) and blood serum was tested using a photometer, then tested with a statistical one sample t-test. The result of the average iron content in the intial week of 31,71 mg/dL, While in the first week amounted to 31,21 mg/dL, and the average iron content of every fortnight in the amount of 30,93 mg/dL. While the result of statistical test one sample t-test showed a gognificance of 0,00 < 0,05 where Ho rejacted. So the conclusion that there is a difference between the blood serum of mice that have not been treated with the serum that has been fed amixture of BR1 and red beans. __________________________________________________________________ Keywords: Folic Acid, Kidney beans, Iron.
