Abstract
Fruit candy is preserved fruit with high sugar level to give a sweet taste. Fruit candy products are intentionally added the preservatives such as sodium benzoate. This study was conducted to determine whether there is a preservative of sodium benzoate and sodium benzoate whether the candied fruit meets the standards set out by the BPOM RI No. 36 Year 2013 on the maximum limit of sodium benzoate preservative as food additives is 1 g/kg of fruit-based ingredients. The sample was used three candied mango taken in supermarkets, minimarkets and traditional markets. The analyses of sodium benzoate preservative were done by two methods: qualitative analysis used FeCl3 reagent and quantitative analysis used spectrophotometry UV-VIS at a wavelength of 274 nm. The qualitative analysis results were showed that the three samples tested are positive containing sodium benzoate and quantitative results were indicated that the sample A is containing sodium benzoate with an average level of 0.8621 g / kg, sample B is 1.069 g/kg and sample C is 0.8608 g/kg. The average levels of sodium benzoate in samples A and C have met the standard while the sample B does not meet the standards. Keywords: candied fruit, Sodium benzoate, spectrophotometry
