Abstract
Avocado seed is a waste that can be used, the avocado seed has a potential antioxidant because it contains flavonoid and tannin. The use of avocado seeds directly considered less practical so an avocado seed extract is made hereafter devised in cream. The addition of tween 80 and span 80 was used as emulsifier. This study aimed to obtain the optimum formula cream avocado seed extract antioxidant activity and the amount of preparation by the method of Simplex Lattice Design. Avocado seed extract obtained by maceration using 96% ethanol. Avocado seed extract was then used as an active ingredient in the manufacture of cream. Avocado seed extract cream was made 3 formulas based on Simplex Lattice Design. The obtained cream was tested for it’s physical properties including organoleptic test, homogeneity, cream type, viscosity, dispersive power, pH, antioxidant activity. Formula optimum parameters was based on physical properties, dispersive power, viscosity, and viscosity shift using Design expert software version 8.0.6.1. The optimum formula obtained was made and tested for the physical properties of the cream and then analyzed using t-test Optimum formula of cream avocado seed extract was obtained by proportion tween 80 3,299% and span 80 1,701%. The response of the physical properties of the optimum formula predictions and experimental results showed no significant difference. The antioxidant activity in 4 grams of avocado seed extract was 206,44 ppm. Key words: antioxidant, avocado seed (Persea americana Mill) extract cream, Simplex Lattice Design.
