Abstract
Vitamin C is an antioxidant that dissolves in water. Sources of vitamin C are vegetables and friuts, one of fruits that contain vitamin C is pineapple (Ananas comosus (L.) Merr.). The purpose of this study was to find out how much vitamin C was in fresh, canned and pineapple jam and to find out whether there were significant differences in the levels of fresh pineapple, canned and pineapple jam. This study used samples of fresh pineapple (Ananas comosus (L.) Merr.), canned pineapples and pineapple jam sold in the Surakarta Supermarket. Qualitative test by conducting various tests using reagents, namely Fehling A and Fehling B, KMnO4, Iodine. In the quantitative test using the UV-Vis Spectrophotometry method with a wavelength of 266 nm and kwoning significant differences using the Annova test then the Kruskall wallis test was continued. Qualitative test result showed positive results and the result of vitamin C levels in fresh pineapple (Ananas comosus (L.) Merr.) using UV-Vis Spectrophotometry method contained fresh pineapple vitamin C levels of 0,035 %, canned pineapple 0,021 %, and pineapple jam 0,076 %.
