Abstract
Sagu (Metroxylon sp.) merupakan Salah satu pangan lokal yang potensial sebagai pengganti beras yang memiliki kandungan karbohidrat yang tinggi dan berpotensial dalam mendukung program ketahanan pangan Indonesia. Potensi sagu di Indonesia sangat besar, khususnya Irian Jaya dan Maluku di wilayah Indonesia Timur. Metode yang digunakan dalam penulisan Karya Tulis Ilmiah ini adalah literature review. Yaitu sebuah pencarian literatur baik internasional maupun nasional yang dilakukan dengan menggunakan aplikasi publish or perish dan database google scholar dan srossref. Berdasarkan Hasil penelitian sebelumnya didapatkan Kandungan karbohidrat pada tepung Sagu Tuni (Metroxylon rumphii) sebesar 89,13%, tepung Sagu Ihur (Metroxylon sylvestersebesar 76,03% dan tepung Sagu Molat (Metroxylon sagus Rottbol) sebesar 88,6% dan kandungan kadar pati tahan cerna pada Mi Sagu Pancasan 9,45 mg/g, mi sagu molet 8,14 mg/g, mi sagu tuni 7,55, mi sagu ihur 7,63 mg/g, dan mi terigu instan 2,44 mg/g. Kata Kunci : Sagu, Karbohidrat , Spektrofotometer UV Vis Sago (Metroxylon sp.) Is a potential local food substitute for rice which has a high carbohyfrate content and also has teh potential to support Indonesia’s food security program. The potential for sago in Indonesia is very large, especially Irian Jaya and Maluku in Eastern Indonesia. The method used in writing scientific papers is Literature review. Namely,a literature search, both international and national, which is carried out using the publish or perish applicaion and the google scholar and srossref database. Based on the results of previous research, it was found that the carbohydrate content of Sago tuni flour (Metroxylon rumphii) was 89,13%, Sago Ihur flour (Metroxylon sylvester) was 76,03% and Sago Molate flour (Metroxylon sagus Rottbol) was 88,6% and the content of resistant strach digestibility in Pancasan Sago Noodles 9,45 mg/g, 8,14 mg/g sagu molat noodles, 7,55 tuni sago noodles, 7,63 mg/g sago ihur noodles, and 2,44 mg/g instant flour noodles.
