Abstract
JAOHAROH, AMALIA., 2020, DETERMINATION OF SAKARIN LEVELS IN THE STROBERY JETS WHICH ARE DISTRIBUTED IN THE MARKET OF JEBRES SURAKARTA IN THE SPECTROFOTOMETRY OF UV-VIS, SCIENTIFIC WRITING, FACULTY OF PHARMACEUTICALS, SETIA BUDI UNIVERSITY, SURAKARTA Jam is defined as a preservative food in the form of fruit juice. process of making jam sweet taste is the most important factor. To save costs producers usually add food additives such as sweetener one of which is saccharin, so it is necessary to identify saccharin sweetener in jam. The purpose of this study is to identify the presence of saccharin sweetener in jam, and calculate the amount of saccharin in the jam that contains saccharin. Samples were taken in 5 different markets with codes A, B, C, D and E. The method used to determine the presence or absence of saccharin is using the resorcinol test method, namely the color change test, if a positive sample contains saccharin, a dirty green color will be formed. saccharin levels using UV-Vis spectrophotometry at wavelengths of 200-300 nm then the results are calculated using the formula for calculating levels. The results of this study indicate that there are 3 positive samples containing saccharin, namely samples A, B, and D with different amounts. For sample A which is 287,126 mg / kg, Sample B is 284,210 mg / kg, and sample D is 235,087 mg / kg. The conclusion is that saccharin levels based on measurement results using UV-Vis spectrophotometry, still meet the 2014 BPOM requirements of 300 mg / kg.
