Abstract
Antioxidants are compounds that can inhibit the activity of free radicals. Papaya flesh contains -tocopherol compounds, ascorbic acid, beta carotene, flavonoids, vitamin B1, and niacin. Flavonoid compounds and vitamin C have antioxidant activity, because they have the ability to remove and effectively reduce damaging oxidizing species. Compounds that have antioxidant activity are known to prevent premature aging. This study aims to determine the physical quality and antioxidant activity of papaya (Carica Papaya L) ethanol extract cream with cetyl alcohol as a stiffening agent using the DPPH method. Ethanol extract of papaya fruit was obtained by maceration method using 96% ethanol as solvent. Papaya fruit ethanol extract cream was made in 4 formulas, namely F1, F2, F3, F4 (negative control) with cetyl alcohol concentration of 6%, 8%, 10% and 8%. The cream preparations were tested for physical quality including organoleptic tests, homogeneity, pH, spreadability, adhesion, viscosity and stability tests using the cycling test method for 6 cycles. The results showed that the ethanol extract of papaya fruit had a strong category of antioxidant activity with an IC₅₀ of 59,3330 ppm. Papaya fruit ethanol extract cream was categorized as moderate with IC₅₀ values from Formula 1-3, including F1 127.2571, F2 112.5506 and F3 148.7150 ppm. While the positive control of Garnier Light Complete White SpeedTM cream got an IC₅₀ value of 84.9654 ppm in the strong category. Differences in the concentration of cetyl alcohol gave different effects on the stability of the physical quality test and antioxidant activity of papaya fruit ethanol extract cream. Keywords: ethanol extract of papaya fruit, cream, physical quality test, antioxidant activity.
