Abstract
Chili sauce is a sauce obtained from processing the main ingredients of chili (Capsium sp) which is ripe and of good quality with or without the addition of other food ingredients used as auxiliary ingredients. This study aims to determine whether the value of the Total Plate Number, Mold and Yeast Number and Identification of Salmonella sp. in chili sauce circulating in Market X meets the microbiological value standard set by the Food and Drug Administration (BPOM) number 13 of 2019. The limit of microbial contamination in chili sauce was determined by the plate count method in duplicate on the surface of the Total Plate Number (ALT) test media, the Mold and Yeast Number test (AKK) was determined by the double cup count method on the surface of the media and test Salmonella sp. using the selective media method. AAS, biochemical test and gram stain. This research is an experimental study with a descriptive research design. Samples of chili sauce were taken as many as 5 samples from traders in Market X by taking random samples. The results of this study indicate that the value of the Total Plate Number in all chili sauce samples exceeds the limit set by the Food and Drug Administration (BPOM) number 13 of 2019 which is (1.0 x 104) colonies/g. The results of mold and yeast numbers in all chili sauce samples did not exceed the requirements set by the Food and Drug Administration (BPOM), namely (1.0 x 103).
