Abstract
Chayote is one vegetable that is used as food and medicine as well as in the treatment of community. Chayote containing compounds that have the potential as an antioxidant because in it there is the content of vitamin C.The purpose of research on the content of vitamin C in squash is to inform the community that inside the Siamese gourd contain vitamin C and know the levels in it.Research carried out on the squash with 3 variations, namely, chayote young, chayote being, and chayote old. The study was conducted using UV spectrophotometry. This method is based on the ability of water-soluble vitamin C to absorb ultraviolet light in the 240 280 nm wavelength range. The experiments were performed with 5 replications. The results showed that the chayote young vitamin C of 0.001415% (b / b) ± 0.00010, chayote being of 0.00261% (b / b) ± 0.00008, and chayote old of 0.002229% (b / b) ± 0.00019.
