Abstract
Vitamin C is the most unstable of all existing vitamins, as it is easily damaged during processing and storage. Easily damaged if exposed to heat and air, making vitamin C have labile properties. Vitamin C has acidic properties and strong reducing properties. Ascorbic acid determination using potassium chromate as an oxidant for basa. This study aims to determine the effect of potassium chromate on vitamin C analysis by spectrophotometry. The analysis is carried out by mixing potassium chromate, sulfuric acid, and ascorbic acid. First, the determination of the maximum lamda against the solution mixture is carried out to obtain absorbance. 5 mixtures of concentration variations were reacted with potassium chromate 157.4 ppm and sulfuric acid 2N 0.5 ml. The analysis used UV-Visible spectrophotometry by determining the maximum lamda first and obtaining the value of the linear regression equation to determine the determination of vitamin C using potassium chromate. The results showed that there were 2 peaks on potassium chromate respectively 366 nm and 264 nm. The peak wavelength reference of 1 is already corresponding between 300-400. Wave peaks were seen in potassium chromate with sulfuric acid respectively 433 nm, 350 nm, and 253 nm. Peak 350 nm as per reference. Variation in concentration of 12 ppm; 9 ppm; 6 ppm; 3 ppm; 1.5 ppm has a linear regression equation y = 0.0178x + 0.584 and a correlation coefficient value r= 0.9998.
