Abstract

Fermentation of the 96% ethanol extract of Moringa leaves (Moringa oleifera L.) is a fermentation process that uses the starter bacteria Lactobacillus bulgaricus by converting carbohydrates into lactic acid. The substrate used in the fermentation was 96% ethanol extract of Moringa leaves and used pasteurized fresh cow’s milk as the medium. The factors that influence the fermentation time. The purpose of this study was to determine the effect of fermentation of 96% ethanol extract of Moringa leaves (Moringa oleifera L.) on antioxidant activity with time variations of 24 hours, 48 hours and 72 hours. The stages of this study included extracting Moringa leaves by maceration method with 96% ethanol solvent, fermentation using Lactobacillus bulgaricus bacteria and pasteurized fresh cow’s milk media with various incubation times of 24 hours, 48 hours and 72 hours, measuring pH and testing antioxidant activity with DPPH method by UV-Vis spectrophotometry at a wavelength of 516 nm. The results showed significant differences (p<0,05) in antioxidant activity in samples of Moringa leaf extract before and after fermentation. This is indicated by an increase in antioxidant activity after fermentation which is included in the level of strong antioxidants. The results of the calculation of the AAI value of 1,844, in the 24 hour fermentation of Moringa leaf extract was 1,938, the 48 hour fermentation of Moringa leaf extract obtained an AAI value of 2,009 and the 72 hour fermentation of Moringa leaf extract 2,219. Significant differences in the antioxidant activity of Moringa leaf extract before and after fermentation were indicated by p<0,05.
