Abstract
Free radicals are compounds that have an unpaired electron in their outer orbital, so they are relatively unstable. These electrons are reactive in finding a partner, so they easily react with other substances. Mango (Mangifera indica L) is a fruit that contains quite a lot of water and belongs to the Anacardiciaea group. Mango fruit has great benefits, mango is very rich in vitamins A and C when absorbed by the body, mango also contains many other vitamins and minerals such as riboflavin, niacin, calcium, phosphorus and iron. To find out the antioxidant activity test on mango skin, maceration was first carried out using mango peel powder by adding methanol as a solvent. Rotary evaporator was used to concentrate the extract and evaporated to obtain a thick extract. then fractionated with nhexane, ethyl acetate, and water, and obtained fractions of ethyl acetate, n-hexane, and water fractions. Testing of antioxidant activity against DPPH was carried out by adding methanol p.a after which it was allowed to stand at 0 - obtained stable results and measured by UV-Vis spectrophotometry at a maximum wavelength of 516 nm. The results of the antioxidant activity test were expressed by IC50 values in the n-hexane, ethyl acetate and water fractions from mango peel extract, respectively, namely 138,095 ppm, 29,171 ppm, and 114.618 ppm.
