Abstract

The liquid smoke of coconut shell (Cocos nucifera L.) is smoke in liquid form pyrolysis process at high temperature obtained from Sarirejo Village RT 03 RW 11 Alastuo, Kebakkramat, Karanganyar. The liquid smoke destilate of coconut shell (Cocos nucifera L.) is the result of liquid smoke after purification through a simple distillation process using a clevenger pipe to obtain a better quality of liquid smoke. The content of liquid smoke of coconut shell (Cocos nucifera L.) compound is useful as an antibacterial and natural preservative of food. This study aims to determine the total phenolic content of liquid smoke and coconut shell destilat (Cocos nucifera L.) and to compare the results of the total phenolic content between the two. The research method to determination of total phenolic content are using a UV-Vis spectrophotometer with the comparator of gallic acid and Folin-Ciocalteu reagent. The principle of this method is the reaction between the phenol compound with the Folin-Ciocalteu reagent producing blue color according to the total phenol content that reacts due to reduction by the Folin-Ciocalteu reagent. The result of this research shows that the total phenolic content of coconut shell liquid smoke (Cocos nucifera L.) from pyrolysis process is 1,015% while the distillate is 1,521%. It can be concluded that the highest total phenolic content of coconut shell smoke (Cocos nucifera L.) is obtained in the distillate.
