Abstract
Noni fruit (Morinda citrifolia L.) can be used as traditional medicine include, kidney diseases, hepatitis, diabetes, digestive system, cardiovascular, etc. Secondary metabolites contained in the noni fruit is very diverse, include Vitamin A, vitamin C, niacin, thiamin, and riboflavin, and also mineral like iron, calcium, sodium, potassium. Vitamin C in 100 gr of Noni fruit contains as much as 175 mg (Jones, 2000). The purpose of this research are to know level of vitamin C in fresh noni fruit by using Spektrofometri UV method and to determine whether there is significant difference in treatment fresh fruit and boiled. Determining levels of vitamin C in noni fruit done by using 2 ways, qualitative and quantitative. Spektrofometri UV method is used as this research. Every trying has been done as much as 6 times replicas. Based on the result of determining levels of vitamin C in Noni fruit, there are 0.164% mean level of fresh noni fruit and 0.46% of boiled noni fruit.
